This Single-Origin coffee carries the character of Indonesia's legendary Toraja region ...a place of mist-covered mountains, remarkable traditions, tiny family farms, and coffee grown at elevations reaching an impressive 2,000 MASL.

And yes, this coffee has a few stories to tell before it even reaches your mug.

🌄 Into the Highlands of Toraja

Deep in central South Sulawesi, the landscape changes dramatically.

Humid lowland rice paddies give way to towering rock walls, mountain valleys, and high elevations often wrapped in mist. This is the homeland of the Torajan people, whose traditional culture remains deeply connected to the land ...including distinctive homes whose architecture famously resembles boats.

It's an especially fitting place for a Skipper's Remedy® coffee.

Because when your coffee-growing region has boat-shaped houses, mountainous passages, and a history shaped by maritime trade, we're naturally going to start thinking about charts and compass headings.

Coffee is cultivated here by smallholder producers, with many farms averaging less than three acres. At elevations between 1,400 and 2,000 MASL, varieties including Catimor, S-795, and Typica thrive in the region's unique highland environment.

The name Toraja  Crossing - Sulawesi is a nod to the maritime character of Indonesia ...a vast archipelago shaped for centuries by movement, trade, and exploration across its waters.

Trade winds carried vessels toward new destinations.

Today, those same winds inspire us to explore a different kind of passage: discovering remarkable coffees from around the globe.

And this one is definitely worth charting.

Toraja Crossing takes a darker turn on the roast chart while maintaining the distinctive character of the origin.

Honestly, that's a pretty good itinerary.

🌿 A Different Way to Process Coffee

Part of what makes Indonesian coffee so distinctive is its processing tradition.

Toraja producers commonly use Giling Basah, or wet-hulling ...a method strongly associated with Indonesian coffee.

At community micro-mills, farmers carefully sort harvested cherries before depulping, fermenting, and washing the coffee. The wet parchment is initially dried, but then comes the unusual part: the parchment is removed while the coffee still has relatively high moisture content.

The exposed beans are then dried further in the sun.

This unconventional process contributes to the characteristic flavor and appearance associated with many Indonesian coffees, including the distinctive bluish-green color of the green beans.

In other words, Toraja takes the traditional coffee-processing route and says, "Interesting idea. Let's try something different."

⚙️ Small Farms. Big Potential.

Producing exceptional coffee in Toraja isn't always easy.

Many farmers work incredibly small plots in rugged terrain where roads and infrastructure can make moving coffee a logistical adventure all its own.

That's why the development of community micro-mills has been so important.

By working together, producers can improve processing consistency without every individual farmer needing to invest in their own milling infrastructure. Regional exporters such as Indokom also help connect producer groups to logistics, milling, quality control, and international markets.

The result is an increasingly traceable supply chain and greater opportunity for small producers to bring high-quality coffee to the world.

That's a pretty impressive voyage from a few acres in the mountains to a freshly brewed cup halfway around the globe.
