Grown in North Tana Toraja on the island of Sulawesi, this coffee thrives at dizzying elevations of 1100–2000 MASL, among humid rice paddies and sheer rock walls veiled in mist. Cultivated in volcanic loam soil by smallholder producers of the Torajan tribe, each bean is a product of tradition, care, and the unique terrain of this high-altitude paradise. The growers partnered with Koperasi Puspeta Luwu, a cooperative with nearly 40 years of expertise, nurture their harvests on farms averaging just a few acres each.

What sets this origin apart is its wet-hulled and sun-dried processing, known locally as Giling Basah. After careful hand-sorting, fermenting, and washing, the beans are hulled while still wet ...giving them their signature bluish hue and deeply layered Indonesian flavor profile.

We’ve roasted this selection to a medium-dark level, just at the start of second crack, unlocking a full-bodied, low-acid cup with a complex profile of baker’s chocolate, nutty tones, and a smooth, lingering finish. It’s the perfect brew to accompany sunrise at the marina or a quiet evening on deck.
