Crafted for our Navigator’s Reserve and released as a Limited edition for Coffee of the Month February 2026, this medium roast is a study in balance, patience, and precision ...both in the cup and at the farm.
This single-origin coffee comes from Apaneca, Ahuachapán, El Salvador, grown at 1,450-1,780 MASL in rich volcanic loam soil. The elevation and fertile terrain create ideal conditions for complexity and clarity, allowing a diverse mix of varietals (Bourbon, Pacamara, Sarchimor, Pacas, Catuai, and Caturra) to shine together in harmony. The result is a coffee that feels composed and intentional, much like trimming sails for a long, steady reach.
Ease the Sail is produced by JASAL, a family-owned operation led by Jose Antonio Salaverria and his sons. Their farm, Cerro Las Ranas (the Hill of Frogs), is named after a lagoon alive with thousands of frogs ...a reminder that this coffee is deeply connected to its natural environment. The Salaverria family is known for meticulous attention to detail, from year-round farm management to hands-on quality control in their cupping lab, ensuring each harvest reflects both craftsmanship and consistency.
The coffee is processed using a pulped natural (honey) method, where perfectly ripened cherries are pulped and then dried with the mucilage still intact. The beans are laid out on clay patios and carefully turned throughout the drying process to ensure even fermentation and moisture reduction. This method bridges the clarity of washed coffees with the sweetness of natural processes, contributing to the cup’s signature profile.
